What we call “lye” is usually sodium hydroxide (NaOH), although historically the term “lye” was used for potassium hydroxide. Lye has many uses, including to cure several foodstuffs. Lye can make olives less bitter, for example. The chemical is also found in canned mandarin oranges, pretzels and Japanese ramen noodles.
